O Dicionário do Doceiro Brasileiro: Os livros de confeitaria do Segundo Império Brasileiro

O desenvolvimento de uma culinária própria permeou todo o processo de busca por uma identidade nacional, como parte significativa da produção cultural brasileira oitocentista. A adaptação gradual de novas edições do primeiro livro de cozinha publicado no Brasil, e a [tentativa de] consagração da cozinha brasileira do segundo livro, Cozinheiro Nacional.

Conservas: para preservar os sabores das frutas

Os árabes difundiram o uso do açúcar na medicina, na culinária e na doçaria. Na península ibérica, especialmente em Portugal, por causa da influência Magrebe, no final da Idade Média já havia o ofício de conserveiro.

Preservar para além da sua estação. O açúcar encontra a fruta, que libera a sua pectina, é a alquimia da conservação. Assim, as conservas de frutas, de um uso apenas medicinal, ganham fama nas mesas dos grandes banquetes no período da Renascença motivados pela fama de Nostradamus e de Catarina de Medicis.

A sabedoria alquimista apresentada a Nostradamus em Milão (1549), faz com que ele publique em 1552 “Traité de Ferdments et Confitures”, que à época foi um grande sucesso.

A conserva é uma forma de dar humor à fruta com água e açúcar, àquela que é demasiado amarga, dura demais, ou que temos em excesso.

Brillat-Savarin diz em sua obra “A fisiologia do gosto”:

Misturado às frutas e às flores, fornece as geleias, as marmeladas, as conservas, as gelatinas e os cândis, o que nos permite gozar o perfume dessas frutas e dessas flores muito tempo após a época que a natureza havia fixado para sua duração.”

Seja compota – fruta inteira em xarope –; doce – normalmente para corte –, ou geleia – textura cremosa, aveluda e brilhante, a conserva de fruta nos acompanha há muitos séculos, e esta história está dentro de potes que fazem parte das nossa mesas todos os dias acompanhado as nossas refeições.
